In my opinion, the best way of preserving your chillies is to double bag them and them freeze them ! I usually de-seed them first, but that's your call.

I made a chilli jam. The intension was to use it as a type of sauce on meats etc.
We had grown those small orange bum burners so by the time i had washed the pots that i made the jam in, my hands had the destinctive chemical burn sensation. Lasted for hours. Havent been game enough to open a jar. Only used 4 chillies.

Yep - rubber gloves are always advised for cutting up hot chillies. It certainly affects my hands - I was quite uncomfortable for a day or so when I first made up a large batch of green curry paste several years ago. I've noticed that it can even get through the thin disposable ones that are used in the food industry, so I now have a pair of rubber kitchen gloves that are dedicated to chilli processing. Just make sure you wash them thoroughly before taking them off.
