Ezy sauce is just wrong IMHO :D, I love making all my sauces from scratch. Can be rather time consuming though.

I've just ordered some of the chilli sauce you recommended CD. And some wine, and some chutney.. :)

Must admit I am a little concerned about the chipotle sauce with a heat rating of 7/10, might have to wean myself onto that one slowly....

I reckon they're over-rating it. None of their stuff is particularly hot as those guys are all about the flavour - which is why they've picked up so many Great Taste awards.

However, if it turn out you're a total wimp, mix it with some mayo - you get all the flavour still but only a fraction of the heat.

Only drink the wine cold - it's quite thick and sweet and resembles a liqueur rather than a wine. I know you're not going to believe me, but it's really nice having about a shotglass poured over vanilla ice-cream. Also goes well with cheese and dried fruit.

I generally use ezysauce, because its easy. dont quite follow the recipie though. Normally

10kg roma tommies
2kg white onions
2kg red capsicums
2kg zucchini
as many chillies as you like.

boil that for ages, blend to smooth. (I dont bother rmeoving skins, or filtering the sauce, it all ends up in the bottle)

add a cup of ezysauce, about 1/2 the sugar the bottle recomends, and about 1/2 the salt the bottle recommends. boil that for about and hour, until your happy with the consistency, then bottle into hot, sterile stubbies.

we quite often use this in spag bol, or on sausages and eggs.

No I dont mate, I dont turn mine into true Chipotle as I cant Cold Smoke for 2 days and its near on impossible to dry foods out in our Wet Climate. I Hot smoke mine for a few hours and this means I can still get a great Smokey Jalapeno flavour but I have to use them straight away as they arent preserved.
